To make my pickles low carb I just swapped out the sugar for another sweetener in all my recipes. Granular Splenda, xylitol and liquid sucralose have all worked perfectly alone or in combination. I haven 't used stevia as it can become bitter and I've read that eyrithritol won't stay in solution and may crystallize as it cools.

ive been making dill pickles for years...always with whole pickles and lemon juice which required countertop curing for days and days. Often they would end up too soft and inedible. I just made this recipe last night and they are delicious and FAST! I love it. My only complaint: i was hurrying and didnt use the hand guard on my mandolin slicer and managed to get a really nasty cut on the tip of my index finger. Use that guard! Thanks for the recipe!

English cucumbers would work great for this. You would probably want to use about 1.5-2 cups of sliced pickles. Just make sure the pickles are completely covered in the liquid.
