I have a recipe similar to this that I make. I wanted it to be 'cheesier' so I added nutritional yeast and a handful of the Daiya Italian blend shredded cheese. It's not as low carb but it hits the spot for Alfredo sauce. Daiya is my only remaining processed food....... I don't even want to know how they get it to melt. I'm just grateful its there when I decide it's time for something creamy (about every six months......). LOL.
