When you say coconut milk are you talking about the kind in the can or in the 'milk' carton? It does it not matter which one?

In reply to Anonymous.

I appreciate your comment. I personally am not a diabetic so I list the net carbs (total carbs - fiber - sugar alcohols) for myself and those that are following a low carb Atkins style diet. Sugar alcohols are known not to impact blood sugar, but everyone reacts differently. Sounds like it would be useful for those with diabetes to have all the info they need and I may include that in future recipes. I am going to be redesigning the layout of my recipes so I will keep that in mind as I change things. For this recipe the nutritional info is the following:
Coconut Layer: Total Carbs- 217 g, Fiber-50 g, Sugar Alcohols- 120 g, Net Carbs- 47 g
Chocolate layer will depend on the chocolate you use, but I used a sugar free chocolate on this one. Chocolate layer with 1 Tbsp of powdered Swerve): Total carbs-130 g, Fiber 16 g, Sugar Alchohols-99 g, Net Carbs - 15 g
Which is where I get the 62 net carbs from. Like with any recipe it's best to calculate the carbs based on the products you use so that you have the most accurate carb count. Thanks again for letting me know and I will try and make an effort to put the additional info on my recipes in the future.

I just found your site and I think some of your recipes are very inventive (I had been looking to substite Chayote for apples but did not know how to cook it correctly). I will try your Chayote crisp and the ice cream recipes for my niece who has Type 1 diabetes and is still a child. However, since you listed this particular recipe in honor of World Diabetes Day I have to point out that children and adults with Type 1 diabetes are insulin dependent and must accurately count carbs and give the correct amount of insulin for everything they eat (as you know). You keep listing "NET" Carbs. What a diabetic needs is the TOTAL CARB Content and the FIBER. They can then subtract the fiber from the total carbs to dose insulin for their food. The total carbs from this recipe according to Calorie King is 181 grams of Carbohydrate for the whole recipe. And I am low-balling a bit. Minus 90 grams for the 6 ounces of low sugar Dark chocolate, and that is still 90 grams.... a far cry from 62. "Net" grams should not be used when factoring recipes for a diabetic. It would be great if you could give us the TOTAL GRAMS of Carbohydrate for all your recipes. Net grams of carbs are misleading. And Type 2s not on insulin still need to lower their TOTAL carbohydrate intake. They may be misled and not know the difference when seeing "Net" carbs and since they don't all dose for the food they eat, these inaccurate counts could lead to very high blood sugars all day.

So glad the low-carb diet has helped with your asthma, Rica. And I've never heard of a pet with diabetes. Wow, I better go put my dog on a low carb diet.
