Sorry if I'm being dense, but you process the cauliflower raw or from a cooked state? I'm very anxious to try this recipe! I've become addicted to your FB page and newsletter! :)

Could Braggs Liquid Aminos be used instead if the coconut aminos can't be found?
I "rice" the cauliflower, put it in a microwave-safe bowl and cook it 6-7 minutes. Our favorite so far is Mexican. I added a can of Rotel tomatoes, some cayenne pepper and cumin and heated it through. I've not made fried rice myself, but my sister did and it was great! My super-fussy son even loved it until he found out it was cauliflower.

I don't like eggs, but you can always add one of you like. Push the "rice" to the side of the pan, add a scrambled egg and let cook. Once cooked you incorporate it into the "rice"

I havent tried it, it make work if it's frozen when you blend it, but it would probably end up more soggy. I'll give it a try when I get a chance

Kathryn, I stay away from soy sauce because 1) soy can be disruptive to your hormones and 2) soy typically contains gluten

I have see the coconut aminos in a few of your recipes. This is not something I have been able to find in a grocery store, so I was wondering I there was a reason you couldn't use just soy sauce. I am newer to this low carb lifestyle but my soy sauce says it has no carbs for 1 tbsp so even if there were "hidden" carbs I still wouldn't think it would contribute much to the carb count of the entire recipe. Will prob try tonight and experiment! Thanks for all your great recipes!!!
