Hi Karen! Some months back, I found a group of recipes for (overnight) refrigerator oatmeal and fell in love with the chocolate-banana version. The recipe calls for, among other things, using yogurt, which I believe is to help alleviate the phytic acid. I don't like yogurt at all, but still want to continue to enjoy this oatmeal. Sadly, I feel guilty every time I eat it. lol

Your recipe for N'Oatmeal sounds like a good alternative. I'm wondering if you might have any ideas on how I could adapt this to be something I can prepare the night before and eat cold? For instance, if I added a banana and some cocoa....and let it sit overnight in the fridge....do you have any idea how much liquid I might need, and would I still need to start with hot water due to the seeds?

I'd appreciate any help you might be able to give....I'm still struggling in a couple areas in going gluten-free. :(

If you add a little oat fiber to this, it would taste even more like oatmeal. I make my own version with almond flour, flax meal and coconut with just a couple tablespoons of the oat fiber. I'm bookmarking your recipe so I can try it, it sounds yumm!
