I have now completed Day 17 of Whole30. For some reason I have really felt like making chili and stews lately. Yes, I realize it is extremely hot in the middle of the South Carolina summer, but I am ready for fall. Since I am staying away from nightshades right now, I needed to come up with a “Chili” that did not use any chili powder or tomatoes. It was certainly a fun adventure!

My meals for Day 17 were:

Breakfast: Chicken Sausage with “Apples”

Snack: No snack

Lunch: Leftover Pork Tenderloin with Mashed Roasted Cauliflower and Garlic

Snack: Cucumbers and Carrots (dressed with olive oil and vinegar)

Dinner: Pumpkin Chili over Turnip Fries (recipe below)

Snack: Olives

I used the following ingredients for Whole30 Pumpkin Chili:

2 lb ground beef

2 carrots, diced

2 ribs celery, diced

1 Tbsp turmeric

1 tsp cumin

2 tsp garlic powder

2 tsp cocoa powder

1/2 tsp ground coriander

1 tsp salt

1/2 tsp pepper

1 can (15 oz) pumpkin

1 1/2 cups chicken stock

In a medium to large pot over medium-high heat, brown the meat and the veggies until the meat is cooked through and the veggies are almost tender. Drain the excess fat. Add the spices and stir to combine. Add the pumpkin and the chicken stock and stir to combine. Cook for 3-5 minutes. Reduce the heat and simmer for 1-2 hours to allow the flavors to incorporate.

Served over Roasted Turnip Fries. Preheat oven to 400 F. Peel and cut 2 large turnips into French fry shapes. Place the turnips on a baking sheet (lined with parchment paper), drizzle with oil, and season with salt and pepper. Toss to coat and bake for 20-25 minutes or until the turnips are tender.

Comments: My finance made it clear that it wasn’t exactly chili, but that it was REALLY good. There is probably a better name, but it was definitely hardy like a chili and it satisfied my cravings.

Things are still going well and I love how I feel on this Whole30 Plan. I am a little nervous because I will be traveling for work later in the week and I really want to stay on plan. I will be taking some food with me (pouches of tuna and salmon) and I’ll pick up some veggies at the store once I get there. This will help me stay on track without being tempted by non-Whole30 food.

Comments: I am not eating fruit right now because I do not want to use it as a replacement for sugar because my cravings may return. I will eventually add fruit back into my diet, but until then I wanted a great replacement. Zucchini is the perfect replacement because it is a blank canvas for flavors. Since I am completing the Whole30 Program I left out sweetener, but I would recommend adding some sweetener and a little vanilla for a more apple like taste. Apples can also be used if you can eat apples on your current meal plan. For the Chicken Sausage I used the seasonings from my Homemade Sausage (minus the cayenne for nightshade free) and added it to ground chicken. I formed the chicken into patties and cooked them in a skillet. I took the Prosciutto Wrapped Cucumber as a Whole30 appetizer for a party. Just make sure to peel and remove the seeds before wrapping half a slice of prosciutto (Check the label for no added ingredients. I used Applegate Farms) around each slice of cucumber.

My latest cooking adventure was Low Carb Buffalo Chicken Burgers with Cucumber Slaw. I mentioned before when I made the Grilled Buffalo Shrimp that I was obsessed with buffalo sauce and that hasn’t gone away yet. My fiancé is not a fan of buffalo sauce, so I knew I needed to get in one more buffalo sauce recipe before he got home from his latest work trip. I decided to use the buffalo sauce in a burger.

Low Carb Buffalo Chicken Burgers (with Cucumber Slaw)

Ingredients:

Buffalo Burgers:
1 lb ground chicken
1/4 cup hot sauce (I use Frank’s Hot Sauce)
1/2 cup shredded grass fed cheese (I used shredded cheddar)
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp celery seed
1/4 tsp salt
1/4 tsp pepper
1 egg (optional)

Cucumber Slaw:
2 medium cucumbers, seeds removed and grated
2 Tbsp shredded carrot
2 Tbsp homemade mayonnaise
1 tsp Dijon mustard
Juice of 1/2 a lemon
1/2 tsp celery seed
1/2 tsp onion powder
1/4 tsp salt and pepper

Preheat a grill or grill pan over medium-high heat. Oil as necessary to prevent sticking. In a bowl, mix all of the ingredients, except the chicken. Add the chicken and stir (or use your hands) until the buffalo sauce mixture is incorporated. Form the meat into 3-4 equal patties.

Grill the patties for 5-7 minutes on one side. Flip the burger over and brush with additional buffalo sauce. Cook for another 5 mins or until cooked through.

Serve the burger on a lettuce leaf and top with Cucumber Slaw (to make the slaw combine all the ingredients in a bowl).

Net Carb Count*:

Buffalo Chicken Burgers: 3 net carbs (for the entire recipe)
Cucumber Slaw: 11 net carbs (for the entire recipe)

Comments: This was definitely a great recipe to make as my last dish with buffalo sauce for a while. This burger has all of the components of buffalo wings without all of the mess. No moist towelettes needed! Ranch seasoning would be good in these burgers instead Italian seasoning. I used cheddar cheese in my burgers because I’m not a fan of bleu cheese. I did not use the egg when I made my burgers on the indoor grill pan, but if you are using the outdoor grill adding an egg will help the burgers stay together better. Since I’m not a fan of bleu cheese dressing either I wanted to top the burgers with something light and refreshing and the cucumber slaw was just perfect. It was the perfect contrast to the spicy flavors of the buffalo burger. For the slaw, I cut my cucumber in half, removed the seeds, and used a mandolin (julienne setting) to grate the cucumber as the base for the slaw. Enjoy!~Karen

My latest cooking adventure was Low Carb Italian Style “Pasta” Salad. Now that it is summer time I’ve been making a lot of salad recipes. Most of my salad recipes contain mayonnaise, which isn’t good if the salad is going to be left outside for a long time. I decided to come up with a delicious salad recipe that 1) replaced the old carb heavy pasta salad and 2) did not contain mayo. The result was a flavorful Italian style pasta salad.

I used the following ingredients for Low Carb Italian Style “Pasta” Salad:

2 medium cucumbers (peeled, seeded, and diced)

2 cups chopped cauliflower (steamed or raw)

1 green onion (just the green part) finely chopped

1/4 cup green olives, halved

1/2 cup grape tomatoes, halved or quartered

2 Tbsp chopped roasted red pepper

2 Tbsp shredded carrots

16 slices of pepperoni, quartered

1 batch of Italian Dressing (recipe below)

2 Tbsp grated Parmesan cheese (optional)

Combine everything but the Italian Dressing and cheese in a large bowl. Add the Italian Dressing and toss to coat (add as little or as much dressing as you prefer). Add the Parmesan cheese, if desired.

Italian Spice Mixture:
1 Tbsp dried oregano
1 Tbsp salt
1/2 Tbsp dried parsley
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
1/2 Tbsp granulated sugar substitute (I used Swerve)
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp black pepper
1/4 tsp celery seed
1/4 tsp red pepper flakes

Combine the spices and use 2 Tbsp of the spice mixture in the Italian Dressing below. (Makes about 1/4 cup of spice mixture)

Italian Dressing:
2 Tbsp of Italian Spice Mixture
2 Tbsp red wine vinegar
2 Tbsp apple cider vinegar
2 Tbsp water
1/2 cup extra virgin olive oil

Combine the spices, vinegar, and water. Slowly add the oil as you whisk to combine.

Net Carb Count*:

Italian Style “Pasta” Salad: 23 net carbs (for the entire recipe including the dressing-makes about five 1/2 cup servings)
Italian Dressing: 3 net carbs (per batch of Italian Dressing)

Comments: This was a perfect summer side dish! There was no cooking involved which was great because I didn’t have to heat up my house in this hot and humid weather. Well, I did steam the cauliflower in the microwave because I’m not a fan of raw cauliflower, but it didn’t require using the stove or the oven. Also, this recipe was a great replacement for the old pasta salad filled with carbs. If you eat Dreamfields pasta, then this recipe would also work with that pasta. The left over spice mixture can be used to make dressing for your next salad or add the spices to almond flour and use it as a breading mixture. This pasta salad would be great for your Fourth of July BBQ because it doesn’t have any mayonnaise and will hold up well. If you prefer a creamy Italian dressing and don’t mind the mayonnaise, you could add 1/4-1/2 cup of mayo to the dressing. I marked this salad as dairy free because the parmesan cheese is optional.

Enjoy!

My latest cooking adventure was Low Carb Hot Dog Relish and Faux-tato Salad. To me summer means relaxing by the pool and enjoying delicious food at family BBQs. While I can still enjoy hot dogs, hamburgers, and grilled chicken at these BBQs there are some side dishes that I can no longer have. One of those dishes is potato salad, but don’t worry I have created a tasty replacement that will make you forget all about that boring potato salad. Also, after ditching the bun on my hotdog I needed a way to spice it up. Turning my Homemade Dill Pickles into a hot dog relish was just the solution.

I used the following ingredients for Low Carb Hot Dog Relish and Faux-tato Salad:

Hot Dog Relish:

1/2 recipe of Homemade Dill Pickles

1/2 roasted red pepper (or about 2 Tbsp of roasted red pepper pieces)

1 green onion (just the white part)

Faux-tato Salad:
2 lbs radishes, quartered
3/4 cup homemade mayonnaise
2 hard boiled eggs, divided
5 tsp mustard
2 Tbsp chopped green onion
2 ribs celery, chopped
6 pieces bacon, cooked and crumbled
1/2 tsp salt and pepper

For the Hot Dog Relish, combine the pickles, roasted red peppers, and onion in a food processor or chopper and pulse until finely chopped. Serve over grilled hot dogs (I used Applegate Farms grass fed, gluten free, beef hot dogs) or burgers.

For the Faux-tato Salad, bring a large pot of salted water to a boil. Add the radishes and boil for 5-7 minutes or until fork tender. Drain and place the drained radishes in a large bowl.

Add mayo, mustard, salt, pepper, and one of the eggs to a food processor or chopper and pulse until smooth. Add the mixture to the radishes and stir to combine. Chop the second egg into bite size pieces. Next, incorporate the celery, green, onions, chopped egg, and bacon into the radish mixture. Add any additional seasonings to taste. Serve with your hot dogs or hamburgers topped with Hot Dog Relish.

Note: I use Apple Gate Farm Grass Feed Beef Hotdogs.

Net Carb Count*:

Hot Dog Relish: 8 net carbs (for the entire recipe–makes about 1/2 a cup)
Faux-tato Salad: 18 net carbs (for the entire recipe)

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

Comments: I whipped up the hot dog relish after having a lot of pickles leftover. It really was a nice change from the usual mustard or sugar free ketchup on my hot dogs. I had to consult my Aunt Mary for her potato salad recipe. In my family she makes her potato salad for every family BBQ and it is always a hit. I basically took her recipe and made a few modification, including adding the bacon because bacon makes everything better. This would make an excellent addition to your Fourth of July BBQ.Enjoy!Do you have a favorite potato salad recipe? Try lowering the carbs by using radishes or cauliflower instead of potatoes. Just make sure your recipe doesn’t contain other high carb items like sugar.

My latest cooking adventure was Low Carb Roasted Cauliflower and Asparagus Salad with Warm Bacon Dressing. Ever since I found out just how absolutely fabulous roasted cauliflower is I have been thinking of different ways I can use it in recipes. I have making various salads a lot lately and I decided to combine by two favorite veggies (at the moment) into an epically delicious salad.

I used the following ingredients for Low Carb Roasted Cauliflower and Asparagus Salad with Warm Bacon Dressing:

1 small head of cauliflower, cut into florets
1 bunch of asparagus cut into one inch pieces
Oil for drizzling
Salt and pepper
4 pieces bacon
1 Tbsp Dijon mustard
1/2 Tbsp apple cider vinegar
1 tsp of sweetener of choice (I used Swerve)

Preheat the oven to 400 F.

Place the cauliflower on a baking sheet lined with parchment paper. Drizzle with the oil of your choice and season with salt and pepper. Toss to coat the cauliflower in the oil. Roast for 15 minutes flip the cauliflower over and roast for another 5 minutes. Add the asparagus to the pan and toss to coat in oil (adding additional oil and seasoning if necessary) and roast both the cauliflower and the asparagus for 10 minutes.

Meanwhile, fry the 4 pieces of bacon. Set the bacon on a paper towel to drain and add the renderings to a small saucepan.

Over low heat, whisk in the Dijon mustard, vinegar, and sweetener. Whisk until smooth.

Once the veggies have roasted, place them in a large bowl. Crumble the reserved bacon into pieces and add it to the veggies. Stir to combine. Pour the warm bacon dressing over the veggies and toss to coat.

Net Carb Count*:

Cauliflower and Asparagus Salad: 20 net carbs (for the entire recipe–with dressing)

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

Comments: I knew this salad would be good by combining my three favorite things: roasted cauliflower, asparagus, and bacon. YUM! Of course bacon makes everything better. I roasted my veggies in melted bacon grease (If you’re gonna go….go all out!), but you can use whatever works best for you. This can be served as a side dish or it works well as a great meal for lunch.

Enjoy!

My latest cooking adventure was Low Carb Grilled Buffalo Shrimp. To say that I have been craving buffalo sauce lately is an understatement. I have been putting in on everything (eggs, veggies, chicken wings, pancakes…..oh wait not pancakes, but you get the point). I was making grilled shrimp one night and I thought that they would be perfect candidate for the buffalo sauce treatment.

I used the following ingredients for Low Carb Grilled Buffalo Shrimp:

1 lb large shrimp, peeled and deveined (I used 26/30 count)
1/2 cup of buffalo sauce (I used Frank’s)
5 Tbsp butter

Preheat the grill or grill pan over medium-high heat and oil as necessary to prevent sticking.

Combine the buffalo sauce and butter in a small saucepan. Allow the butter to melt and the sauce to heat through.

Season the shrimp with salt and pepper and place on the grill. Grill for 1-2 minutes on both sides or until the shrimp turn pink. Place the shrimp in a large bowl and pour the buffalo sauce over the shrimp. Toss to coat, making sure that all of the shrimp get covered with sauce. Serve with celery or broccoli slaw (recipe below).

Low Carb Broccoli Slaw:

12 oz of broccoli slaw mix or chopped broccoli
1/4 cup mayonnaise (preferably homemade)
1 tsp of sweetener of your choice (I used Swerve)
Juice of 1 lemon
1/2 tsp salt and pepper
4 slices of bacon, chopped

In a medium bowl, combine the mayonnaise, sweetener, lemon juice, salt, and pepper. Add the broccoli slaw mix and stir to combine. Add the bacon and stir to incorporate the bacon. Taste and add additional seasoning as necessary.

Net Carb Count*:

Buffalo Shrimp: 5 net carbs (for the entire recipe)
Broccoli Slaw: 12 net carbs (for the entire recipe)

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

Comments: This definitely satisfied my craving for buffalo sauce. Grilling the shrimp gives the shrimp depth of flavor. If you are grilling the shrimp on an outdoor grill (I used a grill pan) it will be a lot easier to flip and handle the shrimp if you use skewers. Thread the shrimp on the skewers and flip after 1-2 minutes. Soak wooden skewers for at least 30 minutes before placing them on the grill. This recipe is very quick and easy to whip up! The broccoli slaw was a last minute addition. I couldn’t decide what to have with the shrimp. When I was at the store, I spotted the broccoli slaw mixture in the produce section and I knew it would make a great low carb side dish. The sauce adds creaminess to the crunchy broccoli without making it very heavy. This would make a great side dish and your next BBQ. Enjoy!

Cucumbers are one of my favorite snacks and lately I was looking for different ways to munch on cucumbers. Store bought pickles often have added sugar and unnecessary ingredients. It’s very easy and quick to make this perfect summer pickle recipe.

I used the following ingredients for Low Carb Homemade Dill Pickles:

3 small cucumbers (about 12 oz total–peeling optional)
3/4 cup water
1/4 cup distilled white vinegar
1 Tbsp salt
2 cloves garlic, minced
1 tsp black peppercorns
1 tsp sugar substitute equivalent (I used Swerve)
1 tsp dried dill weed
1/2 tsp red pepper flakesSlice the cucumbers using a mandolin (medium thickness) or with a knife and place the sliced cucumbers in a medium-large bowl. Combine the rest of the ingredients in a medium saucepan and bring to a boil. Boil for 2 minutes. Pour the liquid over the cucumbers and allow to cool (about 25-30 minutes). Cover the pickles and place the container in the refrigerator for at least 30 minutes. The pickles are ready to be enjoyed as a snack, on top of your favorite low carb burger, etc.

Net Carb Count*:

Cucumbers: 12 net carbs (for the entire recipe)

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

Comments: This is a very quick and easy way to enjoy pickles. Summer usually means an abundance of cucumbers so this is a perfect way to use up those cucumbers. I lightly peeled my cucumbers by peeling the skin every 1/2 inch. This way I got some of the crunch from skin, but the liquid was still able to soften the cucumbers. You could also slice the cumbers in different shapes (spears, etc.), but the cucumbers will need more time for the liquid to flavor the pickles. Enjoy!

My latest cooking adventure is Low Carb Crockpot Pork Roast. I am usually pretty busy during the week and I don’t always have time to make dinner. In order to stay on track with my low carb plan I usually make a large batch of meat (chicken breasts, pork roast, pot roast, etc.) on Sundays so I can eat off of it all week for lunch and/or dinner. This past week I decided to make pot roast. The typical pot roast uses potatoes, but for mine I used radishes. After being slow cooked in the crockpot they taste just like potatoes. It is definitely a great replacement!

I used the following ingredients for the Crockpot Pot Roast:

3 lbs beef chuck roast
3 sprigs of fresh rosemary
5 sprigs of fresh thyme
6 whole garlic cloves
3 cups beef broth
1 lb radishes

Add the beef broth and spices (rosemary, thyme, and whole garlic) into the crockpot. Heat a large skillet on medium-high heat with 1-2 Tbsp of oil. Season the chuck roast with salt and pepper, to taste. Sear all sides of the roast for 1-3 minutes for side or until each is browned. Place the roast into the crockpot. Cover and cook on LOW for 4-6 hours (you will be adding the radishes later–see below) or until the meat shreds easily with a fork.

Cut the ends of the radishes and cut them in half. With 1-2 hours leftover cooking, add the radishes and allow to cook with the roast until tender.

Once the roast is done cooking, taste the liquid and add any extra salt and pepper, if necessary. Remove the meat from the crockpot and shred with a fork. Also remove the radishes. To make a sauce, strain the liquid through a mesh strainer and reserve the liquid. Heat the liquid in a pot and bring to a boil. Reduce the temperature to a simmer and let the liquid reduce by half. Serve the sauce over the roast and radishes.

Net Carb Count*:

Pot Roast with Radishes: 15 net carbs (for the entire recipe with the sauce)

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

Comments: I left out the onions and carrots because I’m not a fan of onions and I didn’t want the added carbs from the carrots. These can definitely be added, but allow extra time for the onions and carrots to cook (they will take longer than the radishes and MAY be able to handle the full cooking time). This recipe produces tender and juicy shredded meat that can be eaten as a meal or used in other dishes like eggs or tacos. I portion the meat and radishes into individual servings and take it with me for lunch or dinner on a busy day. It’s always a good idea to plan ahead, when possible, and have meals and snacks ready. It’s the only way for me to stay on track. Hope you enjoy this recipe!
