Whole30-Day 14 and Ranch Fries

August 17, 2012 By Karen Sorenson

I have now completed Day 14 of Whole30.  The water I was retaining seems to be going away so it must have been something I ate.  I’m still trying to figure out what exactly is causing the bloat.  It can be so frustrating sometimes doing an elimination diet, but in the end I know it will be great to know what my body can and cannot tolerate.  Also, I have lost another 3 lbs this week so progress is still being made.
My meals for Day 14 were:
Breakfast:  Turkey Pesto Meatballs with sautéed spinach
Snack:   Olives and cucumbers
Lunch: Leftover Ranch Chicken Skewers with sautéed mushrooms and a side salad
Snack:  Olives and cucumbers
Dinner:  Ribeye steak with Ranch Fries (recipe below)
Snack:   Olives
I used the following ingredients for Whole30 Ranch Fries:
2 lb radishes, trimmed and halved or quartered
2 Tbsp dry Ranch seasoning (I left out the cayenne for nightshade free)
Preheat oven to 400 F.  Place the prepared radishes on a baking sheet lined with parchment paper.  Drizzle the radishes with 1-2 Tbsp of olive oil and sprinkle the seasoning over the radishes.  Toss to combine and make sure all of the radishes are covered with seasoning.  Bake for 20-25 minutes or until the radishes are cooked though.
Net Carb Count*:
Whole30 Ranch Fries: 21 net carbs (for the entire recipe)
*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.
Comments: This was the perfect addition to my steak!  Any dry ranch seasoning will work with this recipe so feel free to use your favorite.  My fiancé topped his fries with bacon bits and cheese since he is not following the Whole30.
 Enjoy!
