										<content:encoded><![CDATA[<p>I have to admit I&#8217;ve been craving some grain chocolate chip cookies for awhile now.  I&#8217;ve been hesitant simply because I knew I would probably want to devour all of the cookies in a typical batch of cookies.  Sure I could freeze them or give them away, but who can resist a warm cookie fresh out of the oven?  <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> I ended up coming up with this Grain Free Chocolate Chip Cookie in a Minute which is the perfect size to satisfy my cookie craving without going overboard.  It&#8217;s about the size of two regular cookies so you could even split it in half&#8230;if you&#8217;re feeling generous!  Though I wouldn&#8217;t suggest saving some for later as it&#8217;s best served right away.  Also, you can either make it low carb or Paleo depending on your preferences.<br />

My recipe for <a href="https://holisticallyengineered.com/2013/05/instant-cinnamon-oatmeal-low-carb.html" target="_blank">Instant Cinnamon &#8220;Oatmeal&#8221;</a> is one of the most popular recipes on my site and for good reason&#8230;..it&#8217;s delicious!  I ended up coming up with some other flavor combinations: 1) Raspberries and Cream &#8220;Oatmeal&#8221; which is in my ebook, <em>Awaken</em> (check it out <a href="https://holisticallyengineered.com/awaken-egg-free-breakfast" target="_blank"><em>here</em></a>) and the recipe below for &#8220;Brown Sugar&#8221; N&#8217;oatmeal (Get it?  No oats!).  Back in my carb and grain eating days, oatmeal was always an easy breakfast when I was in a hurry so having a grain free instant &#8220;oatmeal&#8221;  option is a really nice change of pace to my usual breakfast of meat and veggies.  What I love about this recipe is that you can make the dry mix up ahead of time and just make servings as needed.  I like to throw one serving of the dry mix into a mason jar and add some hot water when I get to work.  What an easy breakfast!  And the smell (and taste) transports me back to the days of eating a warm bowl of  brown sugar oatmeal.<br />

										<content:encoded><![CDATA[<p>It wasn&#8217;t long ago that I tried spaghetti squash for the first time and was learning how to make spaghetti squash.  I had heard that cutting it in half and roasting it was the best method.  I grabbed my trusty knife so I could try to cut it in half and attempted to cut through the skin of  the squash&#8230;.whoa that thing was tough!  After several attempts and getting my knife stuck in the squash, I finally got it cut in half.  It definitely didn&#8217;t look like the pretty, clean, even cuts in the pictures, but I got it open.  The problem was that the whole time I was terrified of cutting one of my fingers off.  That experience kind of kept we away from the spaghetti squash, but it&#8217;s a versatile veggie so I knew I needed another method if I was going to be able to enjoy some &#8220;spaghetti&#8221; during the winter.<br />

<p>So the other day my mom shared a recipe on Facebook that was a pizza spaghetti bake that used pasta as the main ingredient.  My mom usually does a good job of reducing carbs because she loves the results she gets when she leaves them out of her diet, but every once in awhile she&#8217;ll find recipes that she wants to try that are full of carbs and other non-real food ingredients.  Since it&#8217;s my mother I don&#8217;t want to come off as overbearing and fanatical about not eating grains, etc. so I just left her a lovely comment saying I could make a delicious version without the pasta!</p>
<p>One of my favorite substitutes for pasta is spaghetti squash and I knew it would be perfect in this dish.  Maybe it was because I hadn&#8217;t had pizza in awhile, but that was one of the best dinners I&#8217;ve had all year.  Even my fiance, who hates spaghetti squash, loved it.  I was so glad a had a few meals worth of leftovers!</p>

										<content:encoded><![CDATA[<p>Who doesn&#8217;t love a good chocolate cupcake?  Since tomorrow is my birthday I wanted to make a very special paleo chocolate cupcake to celebrate. Chocolate is my absolute favorite and naturally  I used it for my birthday treat.  These Paleo Chocolate Cupcakes are also filled with a coconut cream filling, made from the cream that rises to the top of a can of coconut milk.  The filling completely optional and you could probably fill them with other things like a homemade jam or almond butter.  Man, now I&#8217;m wishing I would have tried other fillings.  The frosting is made with avocados and I usually get comments from people that think I&#8217;m crazy for using avocado in desserts, but trust me, the frosting doesn&#8217;t taste like avocado.  The avocado adds a creaminess and sweetness to the frosting which pairs perfectly with the cocoa powder.  If you make your frosting smooth enough you will never know what it&#8217;s made from.  If your avocados aren&#8217;t ripe enough you may have to run them through a fine metal strainer to work out any chunks.</p>

<h1>Whole 30 Buffalo Ranch Chicken Meatballs</h1>
<p>When the Super Bowl rolls around I will be two days away from wrapping up my Whole30. That means I need a dish that will be Whole30 approved. One premise of the Whole30 is to not make a bunch of substitutes for your old processed or sugar filled foods. For example, don&#8217;t make ice cream even though the ingredients may be Whole30 approved. The thirty days is supposed to help you deal with your issues with food and making replacements for foods that you’re addicted to does not help you build back a healthy relationship with food. That doesn&#8217;t mean you can never have homemade ice cream or pizza again, but it means you should be able to enjoy them without becoming addicted. Dallas and Melissa talk in more detail about it in <em><a href="https://amzn.to/11eJWye" target="_blank">It Starts With Food</a></em>. That being said, you can&#8217;t just crawl under a rock and be anti-social just because you are doing a Whole30. You can enjoy parties, but bring your own dish, like these Buffalo Ranch Chicken Meatballs. Perfect for sharing and all of the ingredients are Whole30 approved.</p>

<h1>No Bake Almond Butter Bars</h1>
<p>One of the desserts I used to make all the time was Peanut Butter Bars.  Last year I created a low carb version that was delicious, but still required baking to make the &#8220;graham cracker&#8221; crumbs.  This year I wanted to create a no bake version and I also wanted to make the bars with almond butter since it&#8217;s one of my obsessions lately.  These bars are easy to throw together and perfect for any gathering you have this holiday season.  Word of warning these will be so popular that you may need to make a double batch!</p>
