Sweet and Spicy Mixed Nuts (Low Carb and Gluten Free)

The holiday season is filled with parties and gatherings to celebrate this special time of year.  For a low carber this can be a season filled with temptation from all of the high-carb and sugar filled treats at these gatherings.  When I’m going to a party I like to be prepared with food I know I can eat, but is still delicious for those that are not on a low carb diet.  One of my favorite things to bring are these Sweet and Spicy Mixed Nuts. The recipe is easy to make which is always a plus during this stressful time of year.  You can control the level of spiciness by adding as much or as little cayenne pepper as you like.  It’s the perfect way to jazz up regular mixed nuts and makes a festive addition to any holiday party.  You might want to make a double batch!

Sweet and Spicy Mixed Nuts (Low Carb and Gluten Free)

2 cups raw nuts (I used a combination of almonds, pecans, and walnuts)
3 Tbsp coconut oil
3 Tbsp equivalent sweetener (I used Swerve)
3/4 tsp cinnamon
3/4 – 1 tsp cayenne pepper (or to taste)Preheat the oven to 300 F.  Heat the coconut oil in a sauce pan over medium low heat.  Add the sweetener and the spices and cook until the sweetener has dissolved, stirring occasionally.

Place the raw nuts in a large bowl and pour the spice mixture over the mixed nuts and toss to evenly coat.  Spread the mixed nuts on a parchment paper lined rimmed baking sheet.  Bake for 20 minutes, stirring halfway through.

Sweet and Spicy Mixed Nuts:  17 net carbs (for the entire recipe–yields 2 cups)
