I have now completed Day 22 of Whole30. I will be traveling again for work this week and so I did not cook a make ahead breakfast for the week. The plan was to make an “oatmeal” or a porridge. I’ll eventually make it after the Whole30 once I’m back in my own kitchen so stay tuned.
My meals for Day 22 were:
Breakfast: Leftover Dijon Chicken Thighs with Roasted Carrots and Zucchini
Snack: No snack

Snack: Cucumbers and carrots (dressed with olive oil and vinegar)
Dinner: Steak with Turnip Fries (recipe below) and a side salad (dressed with olive oil and vinegar)

I used the following ingredients for Whole30 Turnip Fries:
2 large turnips
Olive Oil
Salt, pepper, and spices (to taste)

Preheat oven to 400 F. Peel and cut 2 large turnips into French fry shapes. Place the turnips on a baking sheet (lined with parchment paper), drizzle with oil, and season liberally with salt, pepper, and spices. Toss to coat and bake for 20-25 minutes or until the turnips are tender.

Comments: I remember the first time I made Turnip Fries for the Pumpkin Chili on Day 17. I had prepared the turnips and just pulled them out of the oven when my fiance walked into the kitchen. He picked up a Turnip Fry, popped it into his mouth, and exclaimed “Yum, this is good! What is it?” I proceeded to tell him that they were Turnip Fries. He said that they couldn’t be turnips because he HATED turnips. He was forced to eat them as a child and ended up hating them. I showed him the remnants of the skin and he eventually believed me. I’m glad I was able to convert him!
