Low Carb Turkey Meatball Stroganoff with Broccoli

Last night’s cooking adventure was low carb Turkey Meatball Stroganoff with Broccoli. I can’t remember where exactly I found this recipe, but I have adapted it slightly to reduce the carbs.

Turkey Meatball Stroganoff:

Preheat the oven to 400 F

Meatballs:
1lb ground turkey
1 tsp. Italian seasoning
1 tsp. garlic powder
1 tsp. onion powder
¼ cup Parmesan cheese
1 large egg

Mix all ingredients, except for the turkey. Add the turkey and mix until just combined. Shape into balls (I used a scooper for uniform size) and place in a single layer (I used my Ridge Baker!). Bake for 15 minutes and drain the excess liquid. Pour the sauce (see recipe below) over the meatballs and return to oven for 15 minutes (or until the meatballs are cooked through-165 F).

Sauce:
½ jar of prepared gravy
¼-½ cup of chicken stock
2 Tbsp of heavy cream
½ cup sour cream
1 cup of sliced mushrooms

Mix together all ingredients to form stroganoff sauce.

Net Carb Count*:
Meatballs: 0 carbs (trace amount of carbs)
Sauce (entire recipe): 20 carbs
Broccoli (entire recipe): 10.5 carbs

*Note carb counts are estimated based on the products I used. Check nutrition labels for accurate carb counts.

I boil the broccoli in some season salt for about 10.5 net carbs for 1 lb bag of frozen broccoli.

Comments: The carb count for the gravy is pretty high. You could also make low carb gravy if the count is too high. I used a small ice cream type scooper to make the meatballs and came out with 28 meatballs. I’m not sure if it is the recipe or the Pampered Chef Ridged Baker, but the meatballs turned out really juicy and had a nice consistency. The sauce was decent, but not necessarily worth the carbs.
