Well, there are 5 days left of my Whole30. Overall, this time around has been pretty easy for me so far. I’ve had fun creating delicious food and even got to try some new things. I’ve felt great and it has been nice to lose some weight. Now if I could just keep the stress level down and get some sleep it would be perfect. Between work, the site redo, and working on getting my egg-free breakfast ebook out (mid-late February) I’ve been pretty busy, but I love having the opportunity to share some fabulous food with some many great people. Ingredients
- 2 lb pork tenderloin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp crushed rosemary
- 1/2 tsp paprika
- 1/4 tsp ground thyme
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat the oven to 450 F
- Pulse all of the spices in a spice grinder until a powder is formed
- Pat the tenderloin dry with a paper towel
- Apply the spice rub to all sides of the tenderloin
- Heat 1 Tbsp of oil in a large skillet, over medium-high heat
- Sear the tenderloin for 3-4 minutes per side
- Place the seared tenderloin in a baking dish and bake for 20 minutes or until cooked through.
