Five Ingredient Friday: Zucchini Noodles (Zoodles)

Today I’m sharing with you how to make Zucchini Noodles (or any kind of vegetable noodle).  It isn’t a recipe per say, but it’s a very valuable technique to have if you are on a low carb and/or paleo diet.  This technique works great with other vegetables also, so be sure to check out my the list of vegetables to add some variety to your noodles.  I recently picked up a Spiral Slicer (and LOVE it), but I know not everyone has this nifty tool so I’m also giving you a list of other tools that are great for making zucchini noodles.

Let’s face it…we’re all busy. Making good decisions in regards to our diets can often be clouded by the fact that our time is limited. Every Friday I will share with you a recipe or technique that uses 5 Ingredients or fewer. The idea is to show you recipes that are easy to prepare and versatile for all of us that don’t have time to whip up a complicated meal during the week.

The recipes will include 5 ingredients or fewer, but there are a few ingredients that are considered “free” ingredients that you probably use every day and are already in your kitchen. The “free” items are water, salt, black pepper, and cooking oil. These items may be used in recipes and won’t count toward the ingredient total. I will also include some optional items that would be great to add if you have them on hand but you don’t need to make a special trip to the store if you’re all out.

Step 1:  The pictures are showing you how to use a Spiral Slicer.  First, trim the ends of the zucchini. Position one end of the zucchini centered onto the slicing blade (the left hand side). Place the spiked handle onto the other end of the zucchini.

Step 2: Turn handle to create noodles.  It’s that easy!

Zucchini Noodles (Zoodles)


  • 2 medium zucchinis
  • Equipment
  • Spiral Slicer or tool for making vegetable noodles


  1. Trim the ends of the zucchini. Position one end of the zucchini centered onto the slicing blade (left hand side) of the Spiral Slicer. Place the spiked handle onto the other end of the zucchini.
  2. Turn the handle to create noodles.
  3. Sauté or steam the noodles for 1-2 minutes or until just slightly tender.

Total Carb Count: 6.57 g total carbs (per serving - serves 2, this is based on zucchini it will change depending on which vegetable you use)

Other Vegetables to Turn into Noodles:

  • Yellow Squash
  • Jicama
  • Celery Root
  • Daikon Radish
  • Parsnips
  • Cucumber
  • Carrots
  • Butternut Squash
  • Sweet Potatoes

Other Ways to Make Vegetable Noodles:

  • Vegetable Peeler:  This is a pretty standard tool that most people have in their kitchen and can make great vegetables noodles.  The noodles end up thicker and more like an Alfredo noodles, but it does make a great substitute.  (Click here to find it on Amazon)
  • Julienne Peeler: A hand held peeler, made with stainless steel and a cover for the blade. This makes a nice drawer tool to pull out when you want a few pretty spiral cut vegetables. (Click here to find it on Amazon)
  • Spiral Cutter: A small hand held peeler with dimensions of 4.75 inches tall and 2.75 make this a good drawer tool. Instead of working like a potato peeler it has an opening for you to insert your vegetable into for slicing and seems to work best with firmer vegetables. (Click here to find it on Amazon)
  • Spiral Slicer: This is the longest and widest of the spiral slicer tools at  10 inches by 5.25 inches wide. There is a container that catches the vegetable noodles as you are slicing. Seems to need the least amount of hand strength. (Click here to find it on Amazon)

    I have that very same spiral tool! Haven’t been using it long though. Works pretty well. What do you do with the cylinder of veggie that goes into the support tube? I’ve been trying to think of how best to use them. So far, I just saute them with the zoodles and eat standing of the saute pan. Works for me! LOL:) but I keep thinking they’re so cute, there ought to be some creative way to use them in a recipe.

    I bought a Vegetti (as seen on TV product) cheap ($16) and as easy as sharpening a pencil. Love zoodles with pesto!
