Ground Beef Skillet (Low Carb and Gluten Free)

I had a long day at work so I wanted an easy one pan dish that didn’t require much effort.  I ending up throwing a bunch of veggies with some ground beef to create this flavorful one pan wonder.

I used the following ingredients for Low Carb Ground Beef Skillet:

1 lb ground beef
16 oz radishes, quartered
5 oz carrots, diced
3 cups spinach
3 Tbsp Dijon Mustard
Salt, Pepper, and Garlic Powder to taste

Heat 1-2 Tbsp of oil in a large skillet over medium-high heat.  Add the radishes and carrots and season with salt, pepper, and garlic powder to taste.  Sauté for 5-6 minutes or until halfway tender.  Push the veggies to the sides of the pan and add the ground beef in the middle.  Cook the ground beef until cooked through.  Drain the excess fat and combine the meat with the veggies.  Add the spinach and Dijon mustard.  Stir to combine and cook until the spinach has wilted and the veggies are tender (cover the pan if necessary to soften the veggies).

Low Carb Ground Beef Skillet:  23 net carbs (for the entire recipe)

Check nutrition labels for accurate carb counts and gluten information.Comments: The result was a flavorful and hearty meal.  It would be a great meal to whip up during the week especial when the weather cools down.  I’m ready for Fall! I know some people find carrots to be out of their low carb range, but there isn’t much in this recipe.  Feel free to substitute another low carb veggie if carrots do not work for you.
