I used the following ingredients for Low Carb Ground Beef Skillet:
16 oz radishes, quartered
5 oz carrots, diced
3 cups spinach
3 Tbsp Dijon Mustard
Salt, Pepper, and Garlic Powder to taste
Heat 1-2 Tbsp of oil in a large skillet over medium-high heat. Add the radishes and carrots and season with salt, pepper, and garlic powder to taste. Sauté for 5-6 minutes or until halfway tender. Push the veggies to the sides of the pan and add the ground beef in the middle. Cook the ground beef until cooked through. Drain the excess fat and combine the meat with the veggies. Add the spinach and Dijon mustard. Stir to combine and cook until the spinach has wilted and the veggies are tender (cover the pan if necessary to soften the veggies).
I know some people find carrots to be out of their low carb range, but there isn’t much in this recipe. Feel free to substitute another low carb veggie if carrots do not work for you.
