Over the weekend we had glimmers of Fall like whether here that made me ready to break out the pumpkin recipes. Unfortunately that feeling quickly left when the AC was out at work this week and I was quickly reminded that summer is far from over here in S.C. So this weekend I will be enjoying my extra day off by sipping on a glass of Frozen Coconut Lemonade by the pool and making the most out of “the end of summer.”
P.S. This works great with limes too and you could even throw in a shot of light rum if you’re so daring.
Ingredients
- 1 13.5 oz can coconut milk
- Zest of two lemons
- 1/2 cup lemon juice
- Sweetener, to taste (I used Confectioner's Swerve--use honey for Paleo)
- 5 cups of ice
Instructions
- Add all the ingredients to the blender in the order listed and blend until smooth
