Shoot for 900 and add headings
I first started low carb over 10 years ago with my mother as one of the many diets we have tried over the years. It was quite successful for me. I lost over 50 lbs and was happy with the results of low carb. The problem was that I got burnt out on eating grilled chicken, burgers on the George Foreman grill (aka cardboard), and sugar free jello, I couldn’t take it anymore and eventually went back to my old eating habits. Through the years, I went on and off low carb but never stuck with it. Fast forward to January 2011. I was having chest pains and diagnosed myself with a heart problem (I may have been a slight hypochondriac). After numerous test, I was told that it was just inflammation from a pulled muscle. Well, since I was living with high blood pressure and cholesterol at young age, I knew that it was time I changed my ways. My diet was horrendous! I ate fast food burgers, french fries, pizza, sandwiches, etc. for every meal. I knew it was time for a change. I decided to start with a low fat diet mostly because I wasn’t ready to give up carbs yet. Well, I did lose some weight, but cutting fast food out of my diet was definitely the source of that weight loss. In May 2011, my brother and I decide to compete in our own biggest loser competition. I’m a competitive person (so is he–it runs in the family) so I knew I had to bring in the big guns to win. Low carb was my secret weapon! I did win the competition and I’m grateful that I decided to once again go back to low carb. The difference this time was that it wasn’t going to be a diet it was going to be a lifestyle change. No turning back! Over the course of a year, I lost about 80 lbs. In December 2011, I decided to start my blog in order to hold my accountable for maintaining my weight loss and also so I wouldn’t get stuck in rut like I had done before. A
Midway through 2012 I decided to make the switch to Low Carb Paleo, which was a fairly easy transition because of my lactose intolerance. When I made the switch to low carb I went from eating cereal, bagels, English muffins, etc. to being at a total loss when it came to breakfast because I’ve never liked eggs. Not only have I never really liked eggs, but I’ve also never been able to tolerate eggs very well. The only time I seem to be able to handle them is if they are baked in a low carb treat. So while all the other low carbers are starting their morning with eggs and bacon, I had to get creative for my morning routine. People always suggest having leftovers for breakfast, but my leftovers were always ear marked for lunch and I like it that way. Since breakfast without eggs was always difficult for me, I figured I wasn’t the only one struggling with what egg free dish to make in the morning. I decided to put together my recipes into a ebook so that I could share with all of the low carb or paleo people out there are looking for something different for their morning meal. The recipes are great for breakfast, but because they are outside of the typical breakfast mold they are also great for lunch, dinner, and maybe even dessert too. A variety versatile book!
