Whole30-Day 6 and Italian Chicken

I have now completed Day 6 of Whole30.  Starting last night I cut out nightshades (except for the small amount that is in my Breakfast Sausage.  I am going to finish up what I have left so it doesn’t go to waste).  The downside to cutting out nightshades is that all my food ends up being green or white.  I need to branch out to some other colorful veggies.  I still feel the need to snack, but I think it is because it is a habit and not necessarily hunger.  I may try and cut back on my snacks (only have them when I’m actually hungry) in order to try and break the habit.

My meals for Day 6 were:
Breakfast:  Homemade Breakfast Sausage and sautéed zucchini
Snack:  Cucumber and olives
Lunch: Leftover Garlic Peppercorn Chicken Thighs with sautéed zucchini and yellow squash
Snack:  Olives and cucumbers
Dinner:  Italian Chicken (recipe below) with sautéed zucchini noodles and mushrooms
Snack:  Olives

I used the following ingredients for Whole30 Approved Italian Chicken:
1 lb Chicken Breast (boneless and skinless)
1/2 Tbsp dried basil
1/2 Tbsp dried rosemary
1/2 Tbsp dried thyme
1/2 Tbsp dried oregano
1 Tbsp garlic powder
1 tsp salt

Heat oven to 350 F.

Pulse the basil, rosemary, thyme, and oregano in a spice grinder until they are mostly ground.  Mix together all the spices and liberally sprinkle the seasoning on both sides of the Chicken.  Place the Chicken in a baking dish and bake for 20-25 mins or until cooked through.

Served with sautéed zucchini noodles and mushrooms

Comments:  I had planned to grill the chicken, but lately I’ve just felt like throwing everything in the oven and not standing over the stove cooking everything.  An Italian Seasoning blend could be used, but check the label to make sure no extra ingredients have been added.
