Whole 30 Buffalo Ranch Chicken Meatballs
When the Super Bowl rolls around I will be two days away from wrapping up my Whole30. That means I need a dish that will be Whole30 approved. One premise of the Whole30 is to not make a bunch of substitutes for your old processed or sugar filled foods. For example, don’t make ice cream even though the ingredients may be Whole30 approved. The thirty days is supposed to help you deal with your issues with food and making replacements for foods that you’re addicted to does not help you build back a healthy relationship with food. That doesn’t mean you can never have homemade ice cream or pizza again, but it means you should be able to enjoy them without becoming addicted. Dallas and Melissa talk in more detail about it in It Starts With Food. That being said, you can’t just crawl under a rock and be anti-social just because you are doing a Whole30. You can enjoy parties, but bring your own dish, like these Buffalo Ranch Chicken Meatballs. Perfect for sharing and all of the ingredients are Whole30 approved.

Ingredients
- 1 lb ground chicken
- 1 tsp Real salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 3/4 cup chicken bone broth
- 1/2-3/4 cup hot sauce (check ingredients)
- 2 1/2 Tbsp dry ranch seasoning
Instructions
- In a medium sauce pot, combine the chicken bone broth, hot sauce, and ranch seasoning (place on the stove for later use)
- Mix together the ground chicken and spices until combined
- Form into meatballs (approximately 20 small meatballs)
- Heat 1-2 Tbsp of oil in a large skillet, over medium-high heat
- Sear the meatballs for 6-8 minutes, turning the meatballs for an even sear.
- While the meatballs are searing, bring the hot sauce mixture to a boil and allow to cook until it has reduced by half and thickened (about 6-8 minutes)
- Add the sauce to the meatballs after they have been seared and cook for another 3-4 minutes or until the meatballs are cooked through.
