Last night’s cooking adventure was Low Carb Garlic Mushroom Stuffed Chicken Breast.
1 Tbsp of oil
1 cup mushrooms, chopped
1 Tbsp garlic flavored cream cheese (I used Philadelphia Savory Garlic)
1 Tbsp of bacon bits (optional)
2 chicken breasts
Salt, pepper, and garlic powder—to taste
2 Tbsp of butter
Preheat oven to 400 F. Heat the oil in a skillet and then add the mushrooms. Cook the mushrooms until brown and season to taste. Add the cream cheese and bacon to the mushrooms. Stir to combine. Set the mixture aside and allow to cool slightly.
Prepare the chicken for stuffing with the following steps:

Cut a slit down the middle of the chicken breast, but don’t cut all the way through the chicken.

Cut the left side of the chicken to almost the edge. It will look like a pocket or the page of a book.

Repeat for the right side of the chicken

Season the inside of the chicken breast with salt and pepper.
Add 1-2 Tbsp of the mushroom mixture to the middle of the chicken breast and fold each flap of the chicken to close.
Season the outside of the chicken breast and place in a baking dish (sprayed with cooking spray) cut side down (careful not to let the mixture fall out). Season the other side of the chicken and place one tablespoon of butter on each piece of chicken. Bake for 30-35 minutes or until the chicken reaches 180 F.
To go along with the chicken I made a mushroom sauce using the following ingredients:
1 cup mushrooms, chopped
½ cup of chicken broth
2 Tbsp of garlic flavor cream cheese
Salt and pepper, to taste
Saute the mushrooms until brown. Add the chicken broth and cream cheese to the mushrooms. Bring to a boil. Reduce the heat and let the sauce simmer until it has thickened.

Comments: This recipe is a good way to jazz up the chicken breast. The garlic cream cheese adds a wonderful flavor inside the chicken. The sauce helps keep the chicken moist and carries the same flavors from inside the chicken. The method used to prepare the chicken for stuffing is quick and simple and doesn’t require pounding out the chicken.
