Today for lunch I made a turkey bacon panini out of an oopsie roll sandwich. I used the usually oopsie roll dough found here: http://yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/ and I added 1 tsp garlic powder and fresh cracked pepper to the yolk mixture. I then spread mayonnaise on the top of two oopsie rolls (so the bottom of the oopsie roll is the outside of the bread). Next I sprinkled cheese on one oopsie roll, topped it with bacon and turkey, sprinkled more cheese on top, and then topped the sandwich with the other oopsie roll (mayo side down). As suggested, I used my George Foreman Grill in order to make the panini. I hadn’t used my GF grill in years because I was not going to eat another dry piece of grilled chicken or hamburger after my first time doing low carb. I preheated the GF grill and sprayed it with non-stick cooking spray. I then placed the prepared sandwich on the grill and closed the lid. After 1-2 mins. the sandwich was perfectly grilled and the cheese was melted.

Comments: This was such a tasty way to eat an oopsie sandwich! Grilled cheese would be AMAZING using this technique. Don’t leave the sandwich on the GF grill for too long because it can burn quickly. Keep an eye on it! It is also nice to use my GF grill that has been sitting in the cabinet collecting dust. If you don’t have a GF grill a pan sear on the oopsie sandwich would be just as good.
