Coconut Tilapia

Tonight’s cooking adventure was Coconut Tilapia. The recipe I used can be found here: http://eatlivepaleo.com/2012/03/03/simple-dishes-coconut-flour-pan-fried-cod/.  See comments below for any modifications I made to the recipe.

Comments: I saw this recipe on Pinterest and decided to give it a try for Fish Friday this week.  The first modification was that I used Tilapia rather than Cod.  Tilapia is a lot easier to find at my local grocery store and it’s my favorite fish.  I also seasoned my tilapia with salt, pepper, and garlic powder.  The fish was tasty, but I should have removed more of the excess flour because it was a little too thick.  This also might be good with some unsweetened coconut mixed into the breading.
