Summer is here and that means lots of summer barbecues, but it can be hard to navigate these gatherings to find healthy foods. If you’re not familiar with the Whole30 program, I definitely suggest checking it out here. It’s a free program I have done at least 4 times (I usually modify it for low carb/low sugar). It was the first thing I did to transition from strictly low carb to paleo/real food. Whole30 helped me ditch the low carb processed foods to a more real foods based approach, and if you’re a male, you can get supplements from these Testogen review which are great to improve the health and performance in males. We have a special guest today, Meg Marrs from Life Health HQ, sharing 5 Tips for a Whole30 Compliant 4th of July. The good news is that these tips are helpful for making healthy choices this summer whether you’re on Whole30 or not. Let’s welcome Meg!!

1. Load Up On Burgers, Steer Clear of Buns

Lucky for you, 4th of July is all about good ol’ fashioned American burgers. Sure, you’ll have to pass on the dogs, but go ahead and grab a few hamburgers (and if they’re made from grass-fed beef, even better)!

Buns are out (who really likes those boring white hamburger buns anyway?), but at most BBQs you’ll be able to find some lettuce leafs to serve as a bun substitute.

Naturally, make the most of the tomatoes, onions, and other tasty burger toppings. While you’ll have to pass on the ketchup, you can add some mustard for flavor (many brands are compliant, but double check to be safe). Also hit up the chips and salsa area to grab guac and/or salsa to top your burger with!

2. Fruit Salad For the 4th

Most BBQs will have at least one (maybe even two) fruit salad items available, so opt for that over cake or cookies. You can also bring your own red, white, and blue patriotic paleo fruit salad to serve and enjoy with other guests.

[Karen’s notes: Summer means it’s berry season so if you’re trying to limit your carbs, stick with strawberries, blackberries, raspberries, and/or blueberries for a delicious summer treat. You can even top it with some unsweetened whipped coconut cream.]

3. Salute To The Seltzer

4th of July often goes hand in hand with drinking. If you’re concerned about any sans alcohol awkwardness, having some seltzer in hand goes a lot way.

Seltzer water is a Whole30 fan favorite, as its bubbly taste can give you something fun to drink around friends. As a bonus, mix seltzer water with various fruits for an irresistible Whole30 mocktail!

4. BYOD (Bring Your Own Dressing)

Prep ahead for your 4th of July BBQ and bring your own compliant salad dressing.

While there will likely be plenty of salad dishes available to you, finding a compliant dressing by the picnic tables may prove to be more of a challenge. Play it safe and bring your own!

[Karen’s notes: I absolutely love to make my own salad dressing! My favorite is this Lemon Basil salad dressing (get the recipe here).]

5. Pack That Plate

Leaving a space on your plate where tortilla and potato chips once would have resided will only make things harder. Instead, fill your entire plate with fruit, salad, and burgers so that you won’t get the feeling you’re missing out.

Keep this tips in mind and you’ll have no problems staying Whole30 compliant during your 4th of July gathering! Focus on the tasty meat, fruit, and salad you can enjoy, rather than what you can’t have.

It’s been awhile since I’ve had a blog post, not because I’ve given up on low carb/paleo eating, but because life changes have limited my space (and natural light) to take food photos. I used to have a photography “studio” (really it was just an extra bedroom) with plenty of space to have all my photography props and a table to hold the food that was getting its photo shoot. Last year, I found myself with significantly less space and those life changes have given me an amazing opportunity to spending more time reconnecting with family and exploring new relationships. It has been an amazing time, but it has been hard for me to find a new “normal” for my blog and the time I have available to dedicate to creating new content. In case you were wondering, it takes a lot of hard work to run a blog. I used to be able to dedicate almost a full time jobs (aka 40 hours or more) worth of hours a week pouring into the blog…this was in addition to the full time day job I already have. It never felt like work because I absolutely love it! But along the way I realized that I had created the blog originally not just as away to track progress and recipes, but also as a way to pretend certain relationship trouble I was dealing with at the time didn’t really exist. It was easy for me to throw myself into the blog instead of dealing with the emotions I was experiencing in “real life.” It’s through this experience that I realized that health is so much more than just physical health. I’ve really been praying about the new direction I want to take the blog. I love creating new recipes and taking pictures of that delicious food, but over the last year I have learned some much about how emotional and spiritual health can affect physical health. I want to be able to share what has inspired and encouraged me so I can help others who may be struggling. So stay tuned for more coming to the Holistically Engineered blog!

So let’s get to the food! I like to keep things simple, especially during the week. These meatballs are easy to make because you just have to add some cooked bacon and onion + an egg + your favorite seasoning to ground beef and the oven does all the work. The meatballs end up juicy and full of flavor! I even have my Mom making these and we’ve both tried them with different kinds of ground meat. We love them with ground chicken (the one with both white and dark meat–i.e. not super low in fat) and up next we are going to try them with ground pork and turkey also. I absolutely love making these meatballs because they are so easy to make and they are very versatile. You can put them in some marinara sauce to eat over zucchini noodles (get the recipe here) or just eat them plain with a side cauliflower mash (get the recipe here). Plenty of options! I first came across a similar recipe from Dandy Dishes when I was trying to figure out what to make with the ground chicken I had in the freezer from my monthly Meat Share. I ended up putting a new spin on the recipe to add the flavors I love and it worked great in many ways.

It’s always nice to have a handful of homemade spice mixtures on hand to jazz up the typical veggie side dishes I eat. Making your own spice mixtures ensure that there are no added fillers, preservatives, or sugar. This Mediterranean spice mixture has a lot of the flavors of the Mediterranean and is versatile for many recipes. I often double or even triple the recipe so I have extra on hand to add to marinades for chicken or to add to homemade salad dressing. You could even buzz the mixture in a spice grinder if you prefer a finer texture.

In the last year or two my Dad had been trying to eat better and lose some weight. I had asked him several times to try going gluten/grain free for 30 days to see what effect it would have on his psoriasis. He eventually got on board and started to notice his skin was clearing up. He was so happy about it! His doctor even said he didn’t need to take the shots he was taking to help “control” his psoriasis since diet had made such a significant difference (the shots weren’t really helping anyway) . Changing his diet also helped him lose around 80 lbs. I was so proud of him and I was honored that he thought highly of the knowledge I had learned over the years to give it a try himself.

You may have heard, but unfortunately my Dad passed away early last month. It was all so sudden and a big shock for my family. Things happen for a reason and even though I may not know why he had to leave us so soon, I know God has a plan and does all things for the good of those that love him. I ended up going through some of his papers and I found a notebook of recipes that my Dad had been making over the last year in his quest to switch to a real food diet. Seeing those recipes instantly put a smile to my face and I just knew I had to recreate them and photograph them for the blog. Photography was one thing we had in common and even enjoyed taking some beginner classes together. I’m planning to compile the recipes into an ebook so I can have the memory of his recipes in one place. I think it will be a good way to go through the grieving process and enjoy delicious food!!

When I first changed my diet I started by lowering my carbs and one of the best substitutes for potatoes was radishes. At first I wasn’t going to try it because most of my experience with radishes was in raw form in salads. Yuck! I definitely wasn’t a fan of raw radishes, but I decided to give cooking them a try. I’m so glad I did because they are absolutely delicious. The strong flavor mellows out when the radishes are cooked. I put them in the slow cooker when I make a pot roast, I fry them them for breakfast, and I roasted them as an easy side dish. Usually I just roast them with a little salt and pepper, but this time I wanted to add some flavor to mix. It’s so easy to change up the taste of your favorite veggies just by changing up the spice combination. Feel free to use your favorite spices!

I usually get all my meat from a local farm that has grassfed beef plus pastured chicken, pork, and turkey. It’s so convenient to be a part of the “meat share” and each month and I pick up the meat at the farmer’s market once a month. It’s already packaged and I store it in my freezer, then the next month I pick up my next batch of meat. This has been a great opportunity to not only get quality meat and support my local farmers, but also to try some different cuts of meat that I might not normally eat. I’ve had boneless pork loin many times, but I had never actually roasted a whole bone-in pork loin roast before. I was excited to see it in my meat selection this month and I wanted to created a delicious herb crust to flavor the pastured pork. It was so easy to make and the herb crust was fantastic. You could use the same herb crust on one of your favorite cuts of meat…just adjust the cooking time. Another bonus for me is that the crust is a great Low FODMAP option.

Today is Day 8 of our 30 Day Clean Eating Challenge. So far so good for me and while my diet normal consists of clean low carb and paleo eating, I had indulged on a little too many grain free treats over the holidays. Plus I’m trying to get rid of SIBO so it’s best for me to eat a sugar/sweetener free and low FODMAP diet right now. When I’m on such a restrictive diet I tend to keep my meals very simple so I don’t introduce too many food variables that my body can react to. After awhile it can get a little boring so lately I’ve been experimenting with some new recipes. These Spiced Chicken Wings are marinated in a spice mixture and makes a flavorful wing. The wings still get super crispy even though they are baked and would make a great addition to any of the end of the season football parties you have. No need to wreck your diet…these have clean ingredients!

So you may be thinking that the little packet of seasoning you usually buy for tacos can’t be all that bad for you. Have you flipped over the package and read through the ingredients? Store bought taco seasoning contains ingredients that are far from real food and add unnecessary carbs and sugar to the mix. It’s so easy to make your own taco seasoning…you won’t even miss that little packet. Plus you’re able to customize the spices to your preferences.

For example, right now I’m eating my usual Paleo low carb diet, but with an emphasis on cutting out foods high in FODMAPs. Read more about why here. I didn’t add any garlic or onion powder to the mix (they are high in FODMAPs) but I was still able to add lots of flavor by making my own mix. If you’re not eating low FODMAP you can use my other recipe for homemade taco seasoning found here.

It’s always nice to have some different veggie options to turn to when you’re wanting something a little different. When I first started posting recipes with carrots most people were shocked because they aren’t considered “low carb” (at least not very low carb). One thing I have learned over the years is that you have to listen to your body. Sure I could eat lower carb veggies like broccoli and cauliflower, but with me having SIBO now (learn more about SIBO here) they automatically cause me to get bloated. If I instead have some carrots then I don’t get that same bloat. For me, right now, I have to focus on eating low-FODMAP vegetables and in most cases those are low carb vegetables (plus more). FODMAP stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides And Polyols. They are short-chain carbohydrates and can be easily fermented by gut bacteria (especially if you have a gut impairment). You can learn more about FODMAPs here and find a list of FODMAP foods here. When I eat foods that my body responds well to, my gut has a chance to heal, I absorb my nutrients better, have reduced inflammation, and automatically lose weight naturally. I spent years trying to fit into a one size fits all approach and that doesn’t always work. Sure I lost weight, but I wasn’t truly healing and eventually hit a wall with weight loss. It’s great to have a starting point, but it’s also nice to be flexible enough to listen to what your body is telling you about the food you eat.
