Salted Caramel ice cream is one of my favorite flavors. The combination of sweet and salty is just perfect. This recipe is intended to be paleo and dairy free, but if you want to reduce your carbs I have a suggestion for a different caramel recipe and if you can tolerate dairy then heavy cream works well also.

During the summer I love to make my own ice cream. It allows me to better control the ingredients and it’s super easy to make. I end up using my ice cream maker a lot so it’s not just a random appliance that just sits there and never gets used, I tend to do that with the majority of my appliances and I end up having to get them repaired over the years (find more info). I keep the ice cream bowl in the freezer all the time so it’s ready to go whenever I need it.

Interested in getting an ice cream maker? Click here to see the ice cream maker I use use and love.

Today I’m sharing a paleo and low carb trail mix that makes a great portable snack. With the warmer weather it’s a great time to go hiking or spend some time outside. Recently, I took a trip to the Great Smoky Mountains of North Carolina and whenever I travel I like to take healthy snacks with me. One of the snacks I decided to make was trail mix. Usually my low carb “trail mix” is just a mix of nuts without anything sweet, but every once in awhile I like to add a little bit of sweetness to the mix. I ended up making candied nuts so that there is a great balance of salty and sweet, also I would leave you this gluten free snack bar which is also a great option.

For paleo, you can use any mix of nuts that you prefer, but for low carb you’ll want to stick with lower carb nuts like pecans, walnuts, almond, brazil nuts, or hazelnuts. If you’re a fan of fruit, you can add some dehydrated fruit like strawberries (lower carb) or bananas (paleo). Be sure to check the ingredients to make sure there is no added sugar.

Who doesn’t need a tried and true grain free chocolate chip cookie recipe? You guys! I’m so excited about sharing this one. You see, this recipe comes from my friend Carol’s new cookbook, Ditch the Wheat and I personally know Carol has poured years into making this cookbook a reality. Do you know that you can deliver Christmas cookies to your loved ones on that special day? You can visit a site like chocolateshippedcookies.com for more info!

When I started my blog back in 2011, Carol was one of my first blogger friends. Carol didn’t live anywhere near me, but thanks to the internet I had someone “by my side” as I tried to navigate learning how to keep a blog up and running plus someone to understand my “crazy” way of eating. She’s an awesome friend, incredible recipe creator, and an amazing food photographer.

Carol and I Before the Low Carb Cruise

Now for the recipe, Carol gave a sneak peak of this cookie recipe back in April at the Paleo F(x) conference and since then I have been making the recipe several times a month. It’s the perfect thing to take to a pot luck since it’s so easy to make and is loved by everyone (even the grain lovers). I’ve had several family members ask for the recipe because they love the taste and they love having a healthier option. If you’ve never seen Carol’s recipes, I definitely recommend heading over to her blog, Ditch the Wheat, and checking out here delicious recipes and spectacular food photos. You’ll definitely be drooling over those photos!

Apples are in season right now so it’s a perfect time to enjoy a natural dessert of paleo bakes apples. The baked apples have all the flavors of fall in a delicious dessert that you can feel good about feeding to your family and friends. To the north of us there are a lot of apple orchards. I really hope I can fit some time into my schedule this fall to make a trip (it’s a bit of a road trip) to pick some apples. I found an orchard that uses an organic growing processes and it would nice to get local, fresh apples that haven’t sprayed with toxic chemicals. One of my goals over the last few years has been to reduce my exposure to toxic chemicals. That has happened through paying attention to my food sources (buying locally, organically grown) and well as removing conventional cleaning and personal care products (replacing them with DIY options or naturally derived ingredients with essential oils).

I just absolutely love chocolate cake, but when you change your diet it can be hard to recreate a grain free or low carb version. You may remember my Grain Free Chocolate Cake Roll recipe. When I made that recipe the texture of the cake reminded me of sponge cake and I knew I wanted to turn it into a layer cake next. The cake roll can be difficult to keep from breaking so the layer cake option makes it much easier to deal with. The good news is that if you’re watching your carbs, I have included some lower carb options so you can still enjoy the cake. I ended up adding a little flavoring to the cream layer. Since chocolate and orange make a great combination, I made that my flavoring of choice. I used Orange essential oil so that I could get the flavoring without synthetic flavorings and without all the added carbs. But remember, not all essential oils can be added to food. Some essential oils are considered perfume grade only and some may say that they are pure, but really can have synthetic ingredients added to it. Just like with food, it’s so important to know the source of the essential oils and how they are processed. I get my essential oils here.

In April I attended Paleo f(x) in Austin, TX. It was a great opportunity to listen to leading experts, doctors, and scientists in the paleo and low carb communities. Plus I got to meet and spend time with some amazing blogger friends. Austin is also a major foodie city and one of the things we got to enjoy was some Chocolate and Candied Orange Peel Gelato from Dolce Neve. Dolce Neve uses milk from grass fed cows and produce from local farms to make their delicious gelato treats. It was a nice treat to enjoy while we were in town.

Of course once I got home I wanted to recreate that special treat with a homemade version. Making your own ice cream is a great way to control the ingredients that work best for you (i.e. dairy or non-dairy, sweetener, etc.). I also like that the orange peel gives the flavor of orange with less carbs than the orange juice. Honestly, I never even thought to make candied orange peels before I had the gelato in Austin. Candying the orange peels softens them and makes a tasty addition to ice cream…just remember to peel as much of the white pith off as you can. The pith makes the orange peel bitter and can make the final ice cream bitter too.

I just got back from the Paleo f(x) conference in Austin, TX. What a wonderful long weekend filled with lots of paleo information, friendly people, and delicious food. After going out to eat and having a lot of samples from the various vendors that were there I am officially tired of eating treats…back to my normal meat and veggie routine. But before I left for Paleo f(x) I had made a grain free Chocolate Roll Cake. It was so decadent..even my grain eating brother liked the cake.

But What if the Cake Roll Breaks…

I do have to admit, when I made the cake I cut the sheet cake in half in order to make two smaller cake rolls (I figured it would be easier to manage). Well, one cake rolled up great without breaking and the other one broke into three even pieces. So what did I do with the broken cake? I turned it into a layer cake by putting, a layer of cake down on the platter and then added some of the cream filling. I then added another layer of cake, followed by a layer of cream, and topping it with the last layer of cake. Once it has set a bit in the fridge, I spooned on some of the chocolate topping. Was it a cake roll? No. But was it delicious? Absolutely! It worked well to save the messed up cake and it still looked pretty.

My friend Carol wrote this fabulous ebook called, Indulge. It has delicious grain free dessert recipes and one of my favorites is a flourless brownie recipe. I wanted to change it up a bit, by making it with carob powder (a chocolate substitute) and swirling in some almond butter. It was a delicious! I served it with some homemade vanilla ice cream (get the recipe here). What I also like about the recipe is that it makes a small amount (I think I got 8-10 brownies) so you don’t have a lot leftover.

Don’t forget to pick up your copy of Indulge here or pre-order Carol’s Ditch the Wheat print cookbook here.

So what exactly is carob? Carob powder is made from the dried pods of the carob tree and is a substitute for chocolate. It has a rich chocolate like flavor. Chocolate is high in histamines and I am trying to eat a low histamine diet to help control and heal my skin and Rosacea symptoms. When I eat foods high in histamine (strawberries, chocolate, fermented foods, avocado, etc.) it flares up the redness in my face. I love chocolate so it’s nice to have a tasty dessert option that tastes like chocolate, but doesn’t cause the same redness flare ups. If you can eat chocolate feel free to use cocoa powder, but it may need some extra sweetener since carb powder is naturally sweeter than cocoa powder.
